Gerschtel soup is a German soup my mom made us lots growing up, I’m now making this soup for my family. Below you will find the recipe for this tasty soup. You can make it just in broth,  I personally like to add in eggs and grated carrots .

Gerschtel / Gerstel / Gaestle soup
4 cups flour
1 cup eggs
1/8 tsp turmeric (optional)

Mix in mixer for about 10 to 15 min.
I like it when it is fine so at the last two min i would add a small, small amount of whites or yoke (or mix and use both) start with few drops for it can make a major difference in small quantities. Some like it coarse, some like it fine so it all depends on the maker. It is an art that gets better with experience.

Drying:
I prefer mine air dried for they don’t take that long to cook. or you can dry them in oven on 150 give or take. Store them in airtight containers in freezer or cooler.

How to cook them:
4 cups flavored chicken broth
1/2 to 1 cup gerschtel (depending on your wanted thickness)

Bring broth to a boil add gerschtel and simmer for 2 to 4 min.

*Remember, if you dry them in oven it takes about 15 min for them to get the desired softness. Garnish with parsley.

Mini Corn Dog Muffins

These mini corn dog muffins were a huge hit in my house, from day one I’ve made most everything from scratch and those moments where I don’t feel like cooking and try to whip up a quick box of Kraft dinner or cook up a pizza pop for my kids they look at me like I’m crazy. My kids have become a little spoiled with solid home cooked meals, they don’t seem to care for the boxed or frozen foods much. I decided to look around online and test a few recipes out, one weekend my mother in law and I decided to make these mini corn dog muffins and to my surprise my kids loved them.  These muffins are easy to make and can be stored in the refrigerator for a few day,  they make a great quick snack and are a great school lunch idea.

Sweet And Sour Meatballs

Tis the season, time to bring out the warm meals that help take the edge off this cold weather that’s fast approaching. This recipe is a favorite in our homes!

Sweet And Sour Meatballs

Ingredients

1 pound ground beef
1 egg
1 onion,chopped
1 cup dry bread crumbs ( can also use crackers)
1/2 cup cider vinegar
1/2 cup ketchup
2 tablespoons cornstarch
1 or 1/2 cup brown sugar (depending on how sweet you like it)
2 tablespoons soy sauce
1 cup water
Salt and black pepper for flavor

Directions

In a large bowl, add beef, salt and pepper, onion, egg, bread crumbs, then make into meatballs about 1 to 1 1/2 inches in size.

Then in a Lg frying pan set at medium heat, brown the meatballs to make sure pink is gone in centre.
In a separate pot, mix together the water, vinegar, ketchup, cornstarch, soy sauce and brown sugar. Pour over the meatballs, and allow sauce to thicken. Heat till bubbles start to form.
Sever over rice and enjoy!

Moist Chocolate Cake

Hi Everyone, today I’d love to share with you a recipe I found and tried and quickly became a family favorite. This chocolate cake became a huge hit the moment I made it and now it seems to be the cake everyone is calling me to make on special occasions.

For those of you who have a weakness for chocolate….sorry this cake will not help, you will be finding yourself in the kitchen sneaking bites of this deliciousness.

Just a quick tip, when I make this cake I let it cool for around 15 mins then I cover it for 45 mins to an hour to let it hold its moisture.
